The most common questions are about sweet treats and this tasty recipe is always very popular at our classes.
It is a lovely thing to prepare healthy treats with your kids. There is always excitement and anticipation on testing your creations together. Using healthy ingredients that will have a great impact on their health, while also educating them for life.
There is great power and confidence knowing exactly what it is that you are adding to your healthy treats, no hidden chemicals, sugars or colouring. On top of that you are using ingredients with great nutritional value, adding flavour, smiles and health benefits to your sweet treats. Sweet cravings don?t have to be daunting, instead it can be a great opportunity to eat the right type of foods.
Freddy?s Mini Bounty Bars:
Chocolate Ganache:
- 2-3Tbsp. Coconut oil
- 4-6 Tbsp. Cocoa powder
- 2-3Tbsp. Honey or maple syrup
- 2 tsp vanilla extract
Instructions:
1.- Melt coconut oil gently, add cocoa powder, mix well.
2.- Then add honey and lastly vanilla, mixing well (be careful not to over mix). Let cool slightly before using with bounty bars.
Coconut Filling:
Ingredients:
- 1 cup almonds or ground almonds
- 1 cup desiccated coconut
- Pinch of Himalayan salt
- 2-3 tsp vanilla extract
- 2-3 Tbsp. Maple syrup or honey
- 1-2 Tbsp. Water (or 1 more if needed)
- 1 Tbsp. lemon juice or 1 tsp lemon extract
Method:
1.- Blend almonds and coconut in a food processor until very fine.
2.- Add the rest of your ingredients and blend until smooth and a dough forms.
3.- Roll 1 or 2 tsp of the dough into mini bars and roll over the Chocolate Ganache or a good quality dark chocolate melted.
Keep bounty bars in an airtight container or freezer bags in the fridge.
